Do you suspect that your child may have the need for a gluten-free diet? There was a research study done in Denmark that offers 5 simple questions to find out if the need is real. Many children have Celiac disease, which is a disorder that damages the intestinal tract when gluten containing food is eaten. Such children do much better on a diet that is gluten free and wheat-free. Foods that contain any form of oats, wheat and barley may be the cause of this trouble. At least half of these gluten intolerant kids go undiagnosed and suffer from the symptoms unnecessarily; these symptoms include abdominal pain, diarrhea and even behavioral problems. While there is a blood test that will identify gluten intolerant kids, it is impractical to give every child these tests. It is much more practical to perform the blood test on children that exhibit one or more symptoms of Celiac disease.
The five questions that were asked were:
1. Has your child ever suffered from abdominal pain more than twice during the past three months?
2. Has your child ever had diarrhea lasting more than two weeks?
3. Does your child have a tendency towards hard and firm stools?
4. Is your child experiencing a normal weight gain?
5. Is your child experiencing a normal height increase?
The results of this questionnaire were astonishing. It was asked of parents of almost 10,000 children and this group contained 13 known cases of gluten-intolerant kids. 7,000 parents answered the questionnaire, 2,835 answered yes to at least one symptom and these children were invited for a blood test. There were 1,720 tested and there were 24 previously undiagnosed cases of children with Celiac disease. After additional tests there were an additional 14 children diagnosed. That means that the total number of kids with gluten intolerance more than doubled in the test group.
If this is the case with your child then you will probably need to switch to a gluten free diet in order to help them lead a healthy gluten-free lifestyle.

Do you experience symptoms that make you suspect a food allergy? The easiest way to find out is by trying a food elimination trial. Sometimes the symptoms of food sensitivity can be as mild as acne, where in other cases the repercussions can be debilitating. Most people have no way of knowing what their symptoms are, or what the effects of the allergy or sensitivity might be. But it will help you if you find out that any symptoms are lessened or eliminated by removing the suspect foods. It is very important to learn all of the words or phrases that mask or are substituted for wheat gluten or most types of grains. For 14 days you should avoid any foods that contain gluten proteins. Try to avoid eating in restaurants for the 14 day period in order to assure that you do not get any unintended contamination to your diet during this important time. Take note of if you feel better during this trial. It takes an average of two weeks for the suspected foods to clear your system entirely. On day 14 eat one serving of something containing gluten, (preferably a small portion of pasta). See what happens sometimes it can take up to 24 hours to for a problem appears. If nothing happens this may or may not indicate a food sensitivity, when in fact you may not have eaten enough to trigger another reaction. Follow the elimination diet for additional days and then try another serving of something containing gluten. If you do not experience any ill effects within 24 hours of the second trial then you are not sensitive to gluten protein. If you do experience ill effects then it is safe to assume that you are gluten intolerant. It is best to seek a doctor’s advice at this point. It may be in your health’s best interest to eliminate gluten from your diet and end your suffering. There are studies that state 1 out of 133 people suffer from celiac disease. However, staying on a strict gluten free diet can dramatically improve the person’s symptoms and quality of life. Since it is considered necessary to remain on the gluten free diet throughout life, you should consult your doctor or a registered dietitian. A grain that merits special attention is oats. Oats are now widely believed to be safe in people with celiac disease although this was not always the case. The concern with oat products is not the grain but rather the manufacturing process used when processing oats. • If you are at least 21 years you can get gluten-free beer. Bards and Redbridge are becoming more widely available all the time.
• It’s good to have some healthier go-to gluten-free snacks you can eat when you are studying or hanging out no matter where you live. You won’t be tempted to eat things that are not on the gluten-free diet or otherwise unhealthy for you.
• Popcorn, nuts, and puffed snacks are better than eating potato chips all the time. Variety in the foods you eat is important. Anyone gets bored eating the same thing over and over again. So keep looking for new items that you can add. We are continually looking for and adding new products.
• If you eat chicken and salad in the dining hall a lot, our gluten free products will give you many different choices. Students order out a lot so it’s a good idea to have some gluten-free alternatives in your refrigerator/freezer.
• Take a nutrition class if you can. You will learn a lot about healthy eating and general, overall healthy eating that will really help you make good healthy food choices. You will realize that naturally gluten-free foods are actually quite healthy!
Armed with knowledge and a little common sense you will enjoy your college years as anyone else can. Our advice to you is to study hard and enjoy your college years.

Apartment Living While at College:
Bring your own toaster. You can’t share it with your roommates because of the crumbs. It’s probably best not to leave it on the counter because your roommates might forget and use it for gluten-containing bread. Unlike your family, your roommates are probably not used to scooping out things like tub butter or margarine, peanut butter and cream cheese without putting the knife back in. Get your own and make sure everyone knows which one is yours and why it’s best not to share. Share your meals with your roommates and you may be surprised that they will want to eat the same food that you are eating and they WILL enjoy them. Start off eating the way you ate while in the dorm and expand your meals from this point. It’s very easy to cook using a crock-pot, bread machine (make your own bread) and other kitchen appliances than you think. Find a source for gluten free foods that you like and use them.

While it might be scary to think about how you will ever manage the gluten free diet at college, it can be fairly easy with a little pre-planning.
In the dorms:
If you haven’t already, contact your school’s nutrition office. Get a list of dining hall items that are gluten-free and look over it before you go to the dining halls. Some colleges and universities label gluten-free items and some will even buy specialty gluten-free foods or set aside special freezers and toasters. Whatever your particular situation, most school dietitians are really familiar with the gluten-free diet and want to help you. Sometimes you feel like a bother, especially if you are having a problem, but you aren’t. Have a microwave and a crock-pot in your room. Microwavable rice and meals are a big help. Meals that you can cook in a crock pot can be very convenient and are a delicious way to end your day. There is a large variety of gluten free meals, soups and stews available and all can be cooked and/or heated in either a microwave or a slow cooking crock-pot. They are easy to make and it’s good to eat some meals away from the dining hall. Breakfast is easy to eat in the dorm - many students, gluten-free or not, do it - so make sure you have gluten-free cereal, muffins and breads Many schools do not allow crock pots. You’ll have to decide for yourself if you can bend this rule a bit and use a one safely. You can make a meal while studying and save the left over’s for another night or when you get in late from the library. Stock up on nutrition bars which are essential for eating on the go or during short class breaks. Our coffee bars and meat pie meals (made into snack bars) have excellent taste and are more filling and better nutritionally than other snacks you may be tempted by.

Snack Attack:
Children who head into school ready to learn in the morning usually walk out of the building “starving.” Working your brain all day really depletes the stomach. Without careful planning, kids raid the refrigerator the minute they walk in the door. Fruits, vegetables protein and other healthy snacks will get them through after-school activities and homework with a lot more energy than empty carbohydrates. The after-school snack attack is really a kid’s fourth meal of the day and there are many ways to create healthy, filling and gluten-free mini-meals.
Kabobs:
Put fruit from those prepared platters onto bamboo skewers with a marshmallow or two as a treat. Food on a stick is always appealing.
Muffins:
Homemade gluten-free pumpkin, blueberry, banana or zucchini muffins almost count as an after school dessert. Plan ahead—make two boxes of basic gluten-free muffin mix and parcel into four different bowls. At that point, add extra fruit or nuts to each bowl. Bake and freeze the extras.
Waffles:
For a change of pace spread Nutella or cream cheese and jelly on a gluten-free waffle, pancakes, breads or muffin.

Pre-teens and teens often don’t like attention called to their food and want to fit in with their peers. So even if your child has never been in the cafeteria line, you will want to know what’s available and safe in middle and high school. Here are some tips for filling the lunchbox with healthy gluten-free food:
• A bread machine using our bread mixes can be a big help in preparing enough bread to keep up with the nearly daily sandwich requirement. Peanut butter is gluten free and many lunch meats are too.
• Make sure every lunch you prepare includes fruit. Fresh fruit is best, but snack packs with light syrup provide a little variety.
• Use leftovers: They’re a nice switch from sandwiches and a good way to stretch your food budget. Slice cold gluten-free breaded chicken from the night before into strips and wrap it up with a small container of ranch dressing for dipping. Fill a wide mouth thermos with warmed up soups or stews. (really good as the weather changes)
• Think small. Kids love food in little packages. Try pudding and Jell-O snack packs, yogurt, and candies in little bags

The American Celiac Disease Alliance says on its website that public schools must attempt to make reasonable accommodations for all children with celiac disease under the Americans with Disabilities Act. Go to the website for more information about section 504 of the Rehabilitation Act of 1973. You’ll find details on how to use a 504 Plan to spell out how your children’s diet should be handled. Many schools will give you a list of the foods on their menu that are gluten free and suitable for children with Celiac disease or following a Gluten free diet. In general the list most likely won’t include too many things your child can eat besides snacks. When the ACDA surveyed parents of children with celiac disease, it found that most parents pack their children’s lunches almost every day.

While one would expect to find gluten in places like breads, pastas, cookies and other obvious grain products, gluten is also “hidden” in many processed foods such as frozen French fried potatoes, soy sauce and rice cereal. Even many non-food items like cosmetics and household cleansers contain gluten. Any product that is made with WBRO or any of their derivatives will contain varying amounts of gluten.

Ginger root is a seasoning and flavors sweets, including cakes, cookies, breads, and beverages. It is also good in sauces, and fruit dishes, and is often used heavily in Asian cooking. When buying, look for ginger root with the least amount of knots and/or branching.
Use fresh gingerroot in stir-fry (especially with beef), sauces, curry dishes, salad dressings and steamed vegetables. For sweets or as a topping for fresh fruit, try using candied or crystallized ginger (cooked in a sugar syrup and coated in granulated sugar) or preserved ginger (marinated in a sugar-salt mixture). Dried powdered ginger, because of its more intense flavor should be used in baking breads, desserts and cookies (gingerbread and gingersnaps). Enjoy a glass of ginger tea. Not only does it taste good; but it also calms an upset stomach, aids in digestion and gives you an energy boost.

The best way to store Dill. Fresh dill weed is widely available in the produce department of most markets. The leaves wilt quickly upon harvesting, but this will not affect flavor. Spritz whole stems lightly with a fine spray of water, wrap loosely in paper towels, and place in a plastic bag. Store it in the vegetable bin of your refrigerator. It should last up to a week and perhaps even longer.
You can also trim the stems, place in a glass with an inch of cold water, loosely wrap the top with a damp paper towel, and invert a plastic bag over the top before storing in the refrigerator.
Fresh dill sprigs can be frozen for up to two months, but be prepared for it to darken a bit in color. No need to thaw it before using. Frozen dill weed will still have more flavor than dried dill.

Sometimes it’s called dill weed because it comes back in the herb garden if the seeds from the previous year have fallen to the ground. It can over take an herb garden area. You can control it by plucking out the new plants you don’t want to grow to maturity. The bright green color of the Dill herb is an attractive addition to noodles and rice or mixed into sour cream with other herbs to be served as a dip.
Dill seeds taste like a mild version of caraway and can be substituted for caraway in breads on a one to one ratio. The flavor of dill weed diminishes greatly the longer it is cooked. Add it at the last minute for full flavor and aroma.

Have a cold? Try cumin. Diluted cumin water is an antiseptic beverage and very useful in the common cold and fevers. To prepare cumin water, a teaspoon of cumin is added to boiling water, which is allowed to simmer for a few seconds and set aside to cool.
If the cold is associated with sore throat, a few small pieces of dry ginger should be added to the water. It soothes throat irritation.

Cumin Seed has been used since Biblical times both as a spice and medicinally. It has been shown to be effective in treating carpal tunnel syndrome, as well as diarrhea, indigestion, and morning sickness. Cumin also shows promise as a natural way to increase breast size.

Storing Cilantro can be very easy. Snip the bottoms of the stems and make sure the leaves are completely dry. Partially fill a jar or glass with water and place the stem ends of the Cilantro in the water. Since Cilantro loves cool temperatures, it is best to store them in the refrigerator. Make sure you cover the herbs with a plastic bag. If the water starts to discolor after several days, change it. Cilantro can last up to 2 weeks, possibly longer, when stored this way.

How can Cilantro heal? Does your stomach hurt or do you have flatulence or diarrhea? Maybe you have some pain from arthritis. Make a cup of tea with Cilantro and start feeling better.
Have a small cut? Cilantro and Coriander (the seeds in the Cilantro leaf) contain substances that can kill bacteria which would prevent infections from developing. Just sprinkle some dried Cilantro leaves or seeds on small cuts and scrapes after washing the area with soap and water and see if that helps.

Let’s use Bay Leaves for cooking. Our Organic Bay Leaf is delicious in soups, vegetables, beef and stew. Bay leaves always add more flavor. Most people are familiar with the sweet but pungent taste of the oil, powder, or sticks of bark from the Cinnamon tree. What is Natural or All Natural Foods? Foods that don’t include any added color, synthetic substances or flavors. The food has been minimally processed and is preservative free. Natural foods can be organic, but not all natural foods are organic. They must be certified organic. You will see the organic seal.

What is Organic? Produce and other ingredients that are grown without the use of pesticides, synthetic fertilizers, sewage sludge, genetically modified organisms, or ionizing radiation. Animals that produce meat, poultry, eggs and dairy products do not take antibiotics or growth hormones. Now, think about it. Can you image giving that stuff to your family? All cinnamon is not created equally. That old jar of cinnamon from years ago in your kitchen probably won’t be nearly fresh enough to confer the full benefits that fresher, organic (non-irradiated) cinnamon stick or its powder recently ground can. Generally speaking, ground cinnamon stays fresh and most potent for up to 6 months from grinding, and cinnamon sticks can keep for 2-3 years.

Beef is a heart healthy meat!
The rush for profits has ruined our foods. Growth hormones are pumped into the beef. Weight gain hormones affects us when we eat this beef. The beef are kept in feed lots where disease is rampant. Look up: “MSG is slowly poisoning America.” We must read ingredients & stop the using the poison, what ever name of the many they call it. We pay for the food we eat then, when pain & illness occur we pay again! Not just to the doctor, but in suffering.

The American Grass fed Association defines grass-fed beef as “those food products from animals that have eaten nothing but their mother’s milk & fresh grass or grass-type hay from birth to harvest – all their lives.”
Grass-fed beef makes a difference, higher in beta carotene & antioxidant vitamins, conjugated linoleic acid (CLA) 3-5 times more, & omega-3 fatty acids, 2-4 times more, important to healthy brain function, & in reducing “bad” cholesterol, diabetes, cancer, high blood pressure & other diseases. Grazing animals have more polyunsaturated fat in their meat than grain fed beef. One reason grass-fed beef is better for your health. But polyunsaturated fats are prone to oxidation & the meat spoils more quickly.
New studies show grass-fed beef is less likely to oxidize. There are more antioxidants in grass than grain, & these substances keep the polyunsaturated fat from oxidizing. Eat meat from a grass-fed cows, you are consuming more polyunsaturated fat, more antioxidants, & the meat is less likely to spoil.

Grass fed beef is a very different product from the beef sold in grocery stores. Most cattle are penned in large feedlots, fed grains & treated with hormones & antibiotics, to promote fast weight gain & to combat disease in this unnatural environment. Grass fed beef are finished on natural pastures. When cattle are fed grain, it changes the chemistry of the animals & negatively affects the characteristics of the meat. There are significant health advantages to grass fed beef.

Why doesn’t Uncured Natural Meats use corn syrup in the meats? First, it is genetically altered. Nothing genetically altered is healthy for your body. It causes blood sugar problems, AND it changes the lipids of the blood from the good cholesterol to the bad kind! CORN SYRUP not fats? YES. The right kinds of fats are necessary for your heart to function.

Farm raised salmon, the better way? FAR FROM THE TRUTH!
Salmon farms pollute the ocean under & 20 miles out past the nets. One reason is the salmon MUST be treated with pesticides due to the cramped conditions, ocean lice craw on them like fleas on a dog. Left untreated the lice cause infections & the fish die. Not good for profits. Not good for the environment!
Alaskan salmon, NEVER farmed! The waters are pure, cold & the currents are swift.

You MUST read the ingredients of what you buy.
MSG is added under many names. Search the web for lists of its names.
In 2004, the World Health Organization declared MSG unsafe for human consumption,

The importance of healthy food can not be ignored. In this country the dollar rules. The food industry generally uses the cheapest quality products they can find, then load it with salt, sugar, & MSG to make you think it tastes good.
