Does this sound all too familiar? You arrive at work, stop by the coffee maker and pour a cup to jump start your day. It’s bad coffee, but it works. Our decaffeinated coffees are processed in Hamburg, Germany, using the MC Water Method. Beans are first soaked in water and then exposed to carbon dioxide, which circulates through the beans, dissolving the caffeine. I have fond memories of my childhood, one of the best of which was my time spent as a cub scout. I especially remember our first camping trip. Most of us were a little on edge when night fell. Oh, there was a nice campfire, but it still seemed a little spooky. We were well fed with roasted wienies and corn on the cob. When you buy coffee, do you really know what’s in the can? Arabica or Robusta: that is the question. These two catagories of coffee beans make up the vast majority of the coffee consumed world wide. Robusta coffee trees mature much faster after planting than do Arabica trees making them a popular choice of farmers, but do produce a lower quality bean. They thrive in a wider range of growing conditions, have a greater bean yield, and are more resistant to disease than Arabica trees. Robusta beans are bitter owing to their considerably higher caffeine content. When you go to the supermarket and pluck a can of your favorite coffee off the shelf, it’s a good bet it contains mostly Robusta beans if it doesn’t expressly say Arabica. Arabica, on the other hand, is the coffee connoisseur’s choice. Arabica trees prefer the cool, moist climes of higher elevations, are slower to mature, its fruit takes longer to ripen, and have smaller crop production. Caffeine in coffee appears to increase sperm “motility,” so say scientists at the American Society for Reproductive Medicine. Since sperm “hyperactivity” is critical to fertilization, heightened motility increases the odds of pregnancy. Colombia’s success in the coffee industry can be attributed to, in part, having seaway access from both the Pacific and Atlantic oceans. It is the only South American country that does. Most Colombian coffee is grown in the Andean foothills where the high altitude and moist climate make for a mild and flavorful coffee bean. Colombia produces upwards of 10 million bags of coffee per year. Because coffee is such important revenue for this country, all cars entering Colombia are sprayed for harmful bacteria that could potentially destroy coffee trees. Probably the best kept secret about coffee is that it delivers more antioxidants than even the latest antioxidant bellwether, green tea. Brazil is the leading producer of coffee beans, Brazil accounts for nearly 30% of the world’s supply of coffee, producing approximately 22.5 million bags per year. Because Brazil is a top producer, some coffee enthusiasts fear that Brazil’s emphasis on quantity leads to decreased quality, however, some regions in Brazil do offer a finer variety like the Bourbon Santos, which is highly sought after. July is National Ice Cream Month!
Think that doesn’t have anything to do with tea? We found out otherwise, ourselves, when we saw on Twitter one day last week that Rishi Tea announced to all NY peeps that Van Leeuwen Artisan Ice Cream was launching Rishi Tea Earl Grey flavored ice cream from their trucks!
We’ve been learning about cooking and baking with tea. And we’ve been told our Caribbean Dream [to continue reading, right-click on link and choose to open in New Tab or New Window] all by itself, unsteeped, makes a great ice cream topping (as well as being great mixed with nuts!). But we hadn’t thought of tea-flavored ice cream!

Ethiopian Yirgacheffe Coffee - is the original coffee bean which hooked the world, discovered growing among goats more than a thousand years ago in what’s now Ethiopia. The indigenous Ethiopian coffee trees (which some experts say, are the only native coffee trees in the world) first grew in ancient "Abyssinia," which is now present day Ethiopia. Ethiopian Yirgacheffe, has a deeply rich acidity and a surprisingly heavy body; a shimmering cocktail of pineapple, pear, citrus and floral notes in the nose. I love my coffee! Until about 2 years ago, I would have a cup of coffee in my hand throughout the entire day. Something happened - I’m over 50 now and I can’t have caffeine in the afternoon without messing up my sleep pattern at night, and my blood pressure was rising.
